In the second episode of my Thanksgiving series, I'm making sweet potato casserole. This was my first time tasting it, and I recommend. The American knew what they were doing when they invented this. It was better than I thought it would be! Acually it's quite good.
Recipe for 4-6 people as a side dish
This is what you need:
2 big sweet potatoes or 4 small
2 tablespoons vegan butter
0.5 dl plant milk
2 teaspoons salt
100 grams vegan butter
100 grams brown sugar
2 tablespoons cinnamon
100-150 grams flour
60 grams sunflower seeds and pumpkin seeds or oats or chopped pecans
283 g marshmallows
This is what you do:
Peel and chop sweet potatoes into small pieces, and put it into a casserole. Cook the pieces in water in 10 minutes. Strain it and put it back in the casserole. Then mash it with a potato masher or blend with a hand mixer. Add 2 tablespoons butter, milk and salt to the sweet potatoes. Mix it all together. Put the sweet potato mash in a small baking dish og spread it out.
Preheat the oven to 180 Celcius.
Make the crumble by having 100 g vegan butter, brown sugar, cinnamon and flour in a bowl, and mix it together. Then add either sunflower seeds, pumpkin seeds, oats or chopped pecans. Then mix it in.
Spread the crumble over the mashed sweet potato. Then use some mini marshmallows or cut big marshmallows into smaller pieces. Then put it on the top of the baking dish. Put the whole thing in the midle of the oven for 10-15 minutes.
Serve it as a side dish and enjoy!
